My son did not enjoy food as a young child. For years, he never complained of feeling hungry and rarely asked for a second helping. He often favored hummus, yogurt, and hot dogs, but detested the kid favorites of pizza, mac n' cheese, pasta, and cereal. He had a slight frame and weighed less than his friends. I was reassured by pediatrician after pediatrician that "obesity is a problem in America" and children are picky. After many years with no appetite, a short stint of stomach pain and a subsequent trip to the pediatric gastroenterologist, endoscopy results confirmed my son's diagnosis of Celiac Disease. He was five years old.
I made it my mission to learn anything and everything about the disease: its only remedy, the gluten-free diet. It is miraculous what a strict GF diet can do for a sick body. From tired and uncomfortable, to healthy and happy. Be at ease knowing that preparing meals and eating out is manageable. Soon you will be on GF auto-pilot.
